Allspice Cloves Sweet Potato
Custom Pancake / Waffle Recipe
SMALL BATCH ::barely sweet :: moderate egg :: bare minimum fat
Mix Wet Ingredients: Whisk 1 egg with 24g brown sugar (2 tablespoons). Whisk in 14g (1 tablespoon) vegetable oil. Whisk in 1 cup milk.
Add Flavorings: Stir in 1/8 teaspoon ground allspice. Stir in 1/8 teaspoon ground cloves. Stir in 1/2 cup cooked, cooled, pureed sweet potato. Stir well until smooth.
Add Dry Ingredients: Combine dry ingredients: 135g (about 1 cup) all purpose flour, 40g wheat bran, 3 teaspoons baking powder, 1/4 teaspoon baking soda, 1/4 teaspoon salt. Stir the dry ingredients into the wet ingredients briefly until just incorporated. Add a little more liquid to reach a good pouring consistency if needed.
Bake: If possible, allow batter to rest for half an hour. Add more liquid if neccessary to achieve desired pouring consistency. Make puddles of batter on a pre-heated skillet.Mix 24g brown sugar (2 tablespoons), 12g white sugar (1 tablespoon), 14g butter (1 tablespoon), 35g flour ( 1/4 cup) plus 1/2 teaspoon cinnamon until crumbly. Sprinkle over top. When the first side is done, flip the pancakes and cook on the other side. Or for waffles, preheat your waffle iron and bake according to the manufacturer's directions.
