Custom Scone Recipe
SMALL BATCH ::barely sweet :: moderate egg :: bare minimum fat
Mix Wet Ingredients: Whisk 1 egg with 24g granulated sugar (2 tablespoons). Whisk in 14g (1 tablespoon) vegetable oil. Whisk in 1/4 cup juice (any flavor).
Add Flavorings: Stir in grated zest of 1 orange. Stir well until smooth.
Add Dry Ingredients: Combine dry ingredients: 135g (about 1 cup) all purpose flour, 40g oatmeal, 1 1/2 teaspoons baking powder, 1/4 teaspoon baking soda, 1/4 teaspoon salt. Stir the dry ingredients into the wet ingredients briefly until just incorporated.
Add Stir-Ins: Fold in 1/4 cup toasted chopped walnuts. (NOTE: adjust stir-in amounts to taste.)
Shape:Turn dough out onto a floured board and knead a few times, adding more flour as neccessary to prevent sticking. Shape into a flat disc, cut into pie-shaped pieces and transfer to a greased baking sheet. Optional: brush with milk, cream or beaten egg. Sprinkle with a little granulated sugar mixed with nutmeg to taste. Alternatively, you could skip the kneading and shaping and simply scoop spoonfuls of dough directly from the bowl to a greased baking sheet, drop-biscuit-style.
Bake: Bake at 350F for 10-15 minutes.
